I’d recommend something by America’s Test Kitchen not that they are necessarily the best but you will get a wide variety of recipes that are pretty good and well tested, they offer explanations of why each dish was made that way so you can understand how cooking works, and they give you advice on techniques and equipment too. In general they are great for beginners. These are the same people who do Cook’s Country if you prefer one of theirs.
Also Jacques Pepin is an excellent teacher.
