I think your best bet is to hop on Amazon (or older stuff on eBay) for books and DVD's. I just used their search for "japanese joinery" and got this and this.
It's not that I don't think what you're talking about exists, and I'm sure there's some guy in Japan willing to get on Skype with you and teach you if you'll pay enough. But I think you'll have much better luck, and get a better pool of resources, if you try casting your net more locally. That way you'll get more direct access to someone that knows really good resources for what you're after, and can communicate clearly and effectively what you need to do. Having a clear line of communication will save you a lot of headache.
Plus -- you won't be dealing with a big time difference. Huge plus right there.
