Wenn du daran interessiert bist Grundlagen und Klassische Rezepte zu lernen, kann ich dir "The Cooks Book" ans Herz legen. Es konzentriert sich vorallem auf gängige Techniken, ob basic oder fortgeschritten, man findet dort fast alles.

Da so ein breites Spektrum beschrieben wird, sind die Unterthemen auf 18 verschiedene Autoren verteilt, alles renommierte Köche.

Ich schaue immer in das Buch wenn ich etwas konkretes wissen will. Wie macht man eigentlich einen Strudel? Steht drin. Wie bereite ich Mangold vor, sodass ich damit Kochen kann? Steht drin. Wie nehme ich einen Fisch aus? Steht drin. Alles leicht verständlich, schrittweise mit Bildern beschrieben und Systematisch eingeordnet.

Das Buch ist wuchtig, teuer (zurecht) und nur in englisch Erhältlich, deshalb empfehle ich es gebraucht zu kaufen (Amazon Marketplace, Ebay)

Has a handful of chefs giving instructions on each of their specialties. So many basic items and staples that seem to advanced are shown in here with quality instruction. Great book to take from and create your own ideas.

If your'e a good cook/chef you can get a Job anywhere in the world, working on ships, restaurants or bistros. the pay isn't that good (depends on where your working and if you're experienced or not) my advice to you, buy a book called the cook's book. it has all the basic and advanced techniques you'll have to use. and an advice from a man in the restaurant buisness, taste all the food you make and develop a pellet for all food.

It covers lots of great basic techniques with great photos and some really novel recipes.
