I love the "Crocheter's Skill Building Workshop" by Dora Ohrenstein, combined with YouTube. I picked that book up at Joann's but it looks like Amazon has it as well!
Typical fun beginner projects:
Dishcloth or bath scrub cloth -- generally from 100% cotton (anything for mugs or other hot items also needs to be natural fibers only -- acrylic can melt!)
Beanie hat, a "cat ears" beanie is easy or very easy! Note that in pink this becomes a pussyhat (but in other colors it's just a cat hat).
Scarf (the infinity or "cowl" types of scarves are a nice short length, this should be easy
I also highly recommend this book, I find videos help for how to hold the hook but when you're first learning if you try to do patterns that way it's frustrating to set down your work, pause the video, and then start it up again, pick up your work correctly, AND not lose your mind. if you kind of bounce back and forth between written info and video it can be easier. Plus the projects are cute!
