If Keto isn’t working out right now you could possibly cycle through 12 weeks of the CSIRO low carb diet and meal plans. It’s a bit of prep so if you’re ultra time poor might not be a go, but this is what I use when not strict keto and it’s loaded with great fresh veggies, mostly chicken and fish (a lot is baked) and herbs and spices to keep it interesting

I'm using the CSIRO low carb book as a plan, and my endo gave me a calorie goal of 1600 per day - he normally suggests keto and shakes but was happy for me to follow the CSIRO diet and my dieticians suggestions.

I've pretty much halved my meals. I don't drink Pepsi or any soft drink so can't comment on that. Maybe try drinking water instead? I have one coffee a day, I get headaches if I miss my coffee
