Hey! There's a lot of books on this but Ican give you two fast tips:

1. Always try to give actors something to do or items they can interact with. Are they frantically searching for something? Picking out an outfit for a big event? Packing in a hurry? These small actions help get actors out of their heads, give a more genuine performance, and elevate what acting they are doing. More on this in the director's six senses.
2. I call this the Tell Me A Story Excercise. I ask my actor to recall a special memory in detail, such as their Prom or first Christmas. Don't tell them it's an acting exercise. But what you'll get out of this is: they'll take natural pauses, stutter, correct themselves, and most importantly they'll mime out details. This is extremely important for your big acting moments and monologues. Because now you know how your actor would recall a memory, they warm up to a more natural way of speaking, and you can pick out specific things you like that they naturally do.
