Look into a slow cooker! Make multiple days worth of meals at once with little effort.
r/slowcooking is a good place to start.
I highly recommend their Dr. Pepper Pulled Pork in the side bar. It's fall apart delicious.
As for a physical cookbook, I've been using "The Everything Healthy Slowcooker Cookbook". It has a ton of variety and it lists the nutrition info for every recipe making it extremely easy to count cals/macros.
