I started taking ribose powder three times a day and then tapered down to once a day. It clears the fog from my brain.
I feel your pain. I had similar issues for decades. You might have other health problems than just MTHFR. I recommend you read this book and experiment with different treatments until you find something that works. Good luck!
There's likely a cause for your chronic exhaustion. Here are the supplements I take and they give me enough energy to do all my work.

Creatine Monohydrate (5g each morning, which gives energy to both your brain and muscles)
Choline (It's a precursor to many of the chemicals your brain needs, such as serotonin. I like Alpha GPC Choline, 600 mg a day. Or you could eat four eggs a day)
B12 (I take the form of B12 called hydroxocobalmin. It stays in your body much longer than other forms)
Omega 3s (100g of chia seeds soaked overnight in water, or 5g of fish oil)
Collagen (enough to get 10g glycine each day, which helps with sleep. For most brands, that's 6 tablespoons of collagen)
Magnesium l-theanine (1 capsule three times a day, for a total of 350 mg Magnesium)
Potassium (1.2g spread out through the day. I use Morton brand Salt Substitute)
Add extra salt to your food (which also helps with sleep)
Melatonin (at least 1mg two hours before bedtime)
Vitamin D (3500 IU once a week)
Eating healthy food, including lots of vegetables, plus turmeric, ginger and garlic
