this book I can only recommend the focaccia recipe as I haven’t played with the other yet. I used to make the most perfect focaccia and I was so disappointed I hadn’t been able to enjoy it until I came across the recipe in this book. It takes a multitude of different flours but again, it is something you may be able to learn to work with and adapt your other recipes. I’m not a baker and only knew the Italian recipes passed down to me. So I don’t know how to play with ingredients to recreate the same textures.
gluten free foods and recipes have come a huge way in just the 10 years I’ve been gluten free. It was incredibly depressing to have to give up such a staple but it gets easier and you’ll learn new tricks. It’s just not fun to have to relearn what you thought you already were so good at!

The gluten free focaccia is pretty good. Not as good as I remember gluten to be, but as close as I can get. I substitute the chickpea flour for hungry Jack potato flakes to make it extra potatoey. I come from a family of bakers but the skill did not pass down to me. This recipe has a lot of margin for error and still comes out great.
