I strongly reccomend checking out the HDRI Handbook. It's a few years old, but explains how to shoot proper DSLR panos in detail. I personally use a 5d Mk3 or Mk4, a Canon EF 8-15mm f/4L Fisheye USM Lens, and a tripod with a Nodal Ninja head. This body/lens combo means you can get the full frame of the fisheye onto the sensor without any cropping. I set the head to 60-degree increments and can rip through a pano in about a minute on set in most lighting conditions. I stitch and merge everything using PTGui.
