There are two Native Foods cookbooks! Do you have the one with the black cover? There's an older book written by the chef who started the company, Tanya Petrovna -- to the best of my knowledge, it's no longer available in the cafés. There are recipes for the nachos and the seitan/tempeh that they use on their burgers.
I really recommend the book I linked. I've been a Native fan for the last few years and I'm a little disappointed with the direction they've taken lately.
