Quad bicycles are not common nor cheap for commercial units. I think the lack of quad bike camper builds is based on that. Fewer bikes, fewer campers. If building your own quad bicycle, there is the complexity of the front wheel steering system to construct.
Mules: You might enjoy the 2015 book by Rinker Buck, The Oregon Trail about his trip of the 2000 mile Oregon Trail with team of mules and a wagon.

He is traveling with sheep and using one to pull his wagon. I had not found anyone using sheep before. Horses and mules are way more "common" amongst the now small group of 'travel with animals and wagons'. There have been a few of using goats. Pack goats are making a small come back for hiking, but trailer pulling is still rare. See The Goat Man of Georgia for a historical nomad with goats and a trailer.
