In addition to all of the others the Perfect Run series is pretty good as far as building on things, character interaction and all of that.
Plus it is a 3 book series that is complete, so no open ended 5-6+ book ongoing thing.
It is a bit of a different type of world but it is well written and is pretty satisfying.
The Perfect Run? Superhero novel where everyone has unique abilities. Definitely no cookie cutter elementalism. Well written and clever, with plenty of action. Not a litrpg. Serialized on Royal Road originally but is professionally published on Amazon.

Since you mentioned Dungeon Crawler Carl, WIll Wright, and Drew Hayes..... if you like the sort of underdog works hard and gets lots of power and is the hero kind of thing, the kinda progression fantasy but also heroic victory stuff..
try The Perfect Run which is a trilogy along the same vein... some people have super powers, the hero can create a type of "save point" like a video game. He refuses to leave a situation without what he thinks is the "perfect" outcome.... It is a great series, I really liked it and unlike a lot of progression-type books, it is actually done.

He who with fights monsters is awesome and right up there with long term series, action packed, and some humor.
The Mage Errant series is a great take on the magic school type of novels. 6 of 7 are out with 7 coming sometime next year. Goof examples of overcoming some stuff in there too. And in some cases choosing some kinda unhealthy ways to try and overcome it but still good story-wise.
Also Paternus: Rise of the Gods is a series that is certainly one where there are dark & bad things on the horizon, but the main cast is mostly prepping for it and taking care of it. Its a well crafted story, it tries to tie in lots of mythological beings into a narrative, and none of it is really all that dark outside of a scene or two that involve minor characters. All in all it is a rewarding story about finding things out, growing stronger, and all that.
The obvious rec here is Super Powereds series (Goodreads), which is based around a super hero academy. Think MHA in style.
There's also The Perfect Run (review, amazon), which has super powers (less super heroes). It has time loops and a diverse cast of super-powered characters trying to save the world... or end it.
