There are a fair number of books that use elemental magic or some variation thereof. Some good examples, like Codex Alera, have already been mentioned.
The Realmwalker Chronicles by Lee Aarons are very reminiscent of Avatar: The Last Airbender, in my opinion, but with a larger list of elements and stronger influences from western culture.
My own novel also uses an expanded elemental system. Different characters can utilize different "Dominions", each of which has unique abilities and costs. For example, one of the characters is a flame sorcerer, which means he can make fire at the cost of his body heat. Another character is a sight sorcerer, who can make illusions and other sight-based effects at the cost of his eyesight. If this sounds interesting to you, check out Forging Divinity.
If you want something on the lighter side, maybe check out Mother of Learning. It's a web serial about a mage who gets stuck in a time loop. Tons of fun.

If you don't mind self-promotion, it sounds like you like stories with heavy magic systems, so my own Forging Divinity might suit your tastes. If you tend to prefer more mystical magic, though, you probably would be better off skipping it.
The Realmwalker Chronicles have a magic system reminiscent of an expanded version of Avatar the Last Airbender, and I get a similar feel for the world and characters (although it seems to have more Western fantasy influences).
I'm really enjoying the magic system thus far in The Fire Mages by Pauline M. Ross. I haven't finished it, but it's been pretty great so far. It has a very intricate system for writing and utilizing "spellpages" (essentially magical scrolls) with enchanted paper and different types of ink. There's apparently more to the system, but I haven't read very far into it yet.
If you like excessively detailed magic, my debut novel Forging Divinity might interest you as well. The basic concept is that different types of sorcerers call upon different "Dominions", each of which has a cost related to the Dominion. For example, Sight Sorcery draws from the caster's eyesight to create sight-based effects (sight enhancement, illusions, etc). Flame sorcerers draw from their own body heat to conjure fire. Some of the forms of sorcery get more esoteric and have less obvious costs.
