You should pick up a copy of The Redwall Cookbook. There are lots of savory and sweet dishes, as well as rustic shrubs and other soft drinks.
In general, think simple combinations of high-quality abundant ingredients. You might have honey-soaked suet cakes studded with dried fruit for dessert after a hearty meal of some good hearth bread and a roast with roasted vegetables alongside. Don't use exotic (outside of whatever particular cuisine you're aiming for) ingredients or methods - for medieval British cuisine, you'd want to do a lot of roasts, puddings (the British definition), root vegetables, pies, and so on. If you want more of a rustic Italian meal, look up pre-Colombian Italian cuisine - the food discovered in the Americas shaped Italian cuisine permanently. You'll be eating a lot of pasta and vegetable dishes with oil, peppers, garlic, parsley, anchovies (very important), capers, and other seafood.
