The ancient Hebrew scribes had no issues. They realized the Hebrew language used was strange and frankly ignored it to count their calendar year from Adam.

There are literally dozens of us who trust the scientific method but still possess beliefs in the metaphysical.
But seriously, the two are not mutually exclusive, despite what a culture would have you believe. Gerald Schroder wrote a great book called <em>The Science of God</em>, that is a wonderfully plausible interpretation of Biblical Genesis from a scientific perspective. Well worth a read if you struggle with how to reconcile the two.
" so don't force me to live by your laws if you can't prove your claims." Herein lies the problem. Many ultra orthodox are pretending like they are the voice of the many when they are not. Did you know judaism is one of the only religiouns where we DON'T think everyone should convert to judaism. In fact, we try to discourage it. We are very firm believers in the fact that we shouldn't shove our doctrine and belief in other's faces.
The fact that the Haredi community wants to make Religious law into secular law is a problem for us too =/
As for the rest. What I think you are trying to ask, and I'm sorry if I'm wrong again, is why exactly to I believe in my religion. And that is because of the proofs I have seen. And not in personal miracles and stuff like that. I don't think I've ever felt god in me like a lot of christians say. I read a book once.

The physicist Gerald Schroeder has an interpretation that might be of interest to you, which he lays out in his book The Science of God.
Unfortunately it has some time since I read it and I don't think I can do his argument justice right now. If you have time, he gets into it in this lecture.
He points out that the medieval theologians who calculated a 6,000 year old universe based off of the bible did not know about relativity. He shows mathematically that six 24-hour periods at the time of the big bang actually translate into 13 billion years today, when accounting for the expansion of space-time. There is an exponential decay in how much time we perceive each biblical day to be, and Schroeder demonstrates that the biblical creation events correspond neatly using this time model to archaeological evidence like Earth's formation, the Cambrian explosion, etc.
I think it is a really neat approach.
Geral Schroeder PhD might be a good place to start. I don't really jive with his theories (too God/Bible centered for me), but he might be a good compromise for you. He's an orthodox Jew who takes the Biblical account of creation and connects it with modern scientific theory (specifically in his book The Science of God)

Note: I have these books, but Schroeder and Ross have much more writing and papers on the topic but these are good starts. Enjoy.
Edit: Years ago, before the internet, I scrimped and saved some money to budget for an Interlinear Bible and Strong's Concordance. I recommend buying them or bookmarking an online equivalent (I use Bible Hub.) Schroeder and Ross exegete the Torah and it's Hebrew deliciously.

This book discusses these issues quite thoroughly. It's actually kind of fascinating.
Of course, as people have stated, fundamentalists on each side will of course hate it. But everyone else will at least have some new ideas to think about.
