The Legend of Randidly Ghosthound; real life apocalypse, the fighting is probably the second best part of the series, after how its entire system is designed (multiple other stories have copied the system).
Azarinth Healer; portal story, after the first 2-3 chapters the fighting starts and is great. 90% fighting animals and monsters, with just enough PvP to keep it interesting. Character is a bit generic anti-social, but overall the writing is great.
The Arcane Emperor; portal story, mostly magic based fighting with some magically assisted butt-kicking. Character's a bit too OP and the content probably isn't for everyone, but it's been consistently good and I binged the first 2.4K pages in about 3 weeks of reading nothing but this story. It's up to 2.8K pages, so tons of content.
The Ten Realms; portal story with a twist, as two soldiers are sucked into a world together. It's written by the guy who wrote the Emerilia series, which is pretty good for a crafting story. This story is a mix of a cultivation story and a litRPG, and it does it amazingly well. This is the only story with guns on my list, with the guns being the OP part for basically the first book. Book 2 and 3 aren't on RR, you have to actually buy them on Amazon. It's almost impossible to get me to pay for something, and I bought them both the moment they came out. Editing is a bit rough, but you basically get used to that with both the cultivation genre and the litRPG genre.
While Ten Realms would be on your list to not post, the author Michael Chatfield's other 2 LitRPG series would be ok I guess. Emerilia and Death Knight. Emerilia actually has been editted too!
Emerilia series fits this bill certainly. Starts off fantasy turns sci-fi as they go along.

I'm in the middle of Emerilia right now, has nice romantic relationships with the MC as well as other couples that or courting going on with side characters! Not harem as of book 3 where I am and only mild sexual encounters discussed outright.
