Seems like you might like the Vegan Stoner cookbook, lots of easy, quick meals. It doesn’t make cooking an intimidating science, just a lot of solid basics. It’s $15 on Amazon , or you can get the Kindle version for $10!

There are 'simple' themed cookbooks with minimal cookbooks. Below is a link to my most recent favorite cookbook. Really good recipes with minimal ingredients, like 10 ingredients max I feel like.

There's this vegan cook book I know called "The Vegan Stoner" with quick, easily recipes. And I'm sure that they'd be pretty healthy things, like broccoli and carrots. It's a little bit pricey but it might help you on cutting cals when it comes to munchies :)
I am the worst cook ever. I am super lazy and not very good at it, and I've had a million vegan cookbooks bought for me that I've never used. All that said, my girlfriend introduced me to the Vegan Stoner cookbook and it's awesome. I've actually learned to cook a bunch of things out of it and they've all been really good.
Basically, it's really simple, each recipe has like 4 or 5 steps, and everything is illustrated with a bunch of stoned fruits and vegetables doing random things. Great book. :)

Thug Kitchen's Cookbook has pretty easy recipes as well.
I know that neither of those specifically market themselves for beginners, but I've seen them recommended before and made some of the thug kitchen stuff and can attest they are pretty simple/basic.
