You know what you might need? The Veselka Cookbook. Link on Amazon, but out of print there.
Veselka is an incredible Ukrainian cafe on 2nd avenue in NYC. I was so obsessed with them when I lived there that I bought their cookbook several years ago.
I am the opposite of you: Jewish but no Ukrainian background to speak of, but there is a lot of intersection between the two cuisines. I could definitely make a Passover meal using just this cookbook and no one would think twice about it.
Since that book is out of print on Amazon, maybe try calling Veselka directly and see if they can ship it to you (if you’re interested). And if you’re near NYC, definitely visit them. I don’t know Ukrainian food very well outside of this one restaurant, but there were usually a lot of Ukrainians there, which is always a good sign.
Not sure if you still have family and friends in Ukraine, but regardless, I wish you the best. 🇺🇦
