If you are wanting something similar to GoT, take a look at <strong>The Stormlight Archives</strong> by Brandon Sanderson.
I just picked up the first book. I bought it based on the 5,000+ 4-5 star reviews on Amazon. I didn't realize the books in the series are all 1,000+ pages, so I was a bit surprised when it arrived. People are liking it more than Fire and Ice and even LotR, so it's got to be worth a shot.
I haven't started it yet as I'm reading through a few other books first, so I can't personally comment on the writing quality.

If you're at all into epic fantasy, Brandon Sanderson is known for his "plot avalanche." I've only read the Stormlight Archive, but I can tell you if you do choose to start there, you've just found yourself three thousand pages of awesome.

The Stormlight Archives! By god, read The Stormlight Archives! I tell people to read stuff from Brandon Sanderson more often than I talk to my parents. It's good. And then it gets better. Then it becomes the best story you've ever read.
And then you're fucked because there's no way out and the series is ongoing. Then, when you're caught up, you realize there's a multi-series story going on behind the scenes. A secret story within a story, across like 14 books and counting! And they all tie in to events across each series! And then you're furiously researching lore at 4 in the morning, simmering like a fucking kettle because the next book comes out in one month and two days and you're dead inside until then.

It's epic fantasy, and the world building is amazing. :) It's hard to fully explain because the world Sanderson has built is so complex.
Essentially, it's about a world where a group of people (called the Heralds) wage war against these monsters (called Voidbringers) in order to protect humanity. If a Herald dies, they always resurrect and come back (bc the monsters keep coming back in cycles after many years). It's part of an oath they make.
After countlessly dying, they decide - screw this. We're tired. And they leave.
The book is about what happens thousands of years later, when people have forgotten what the Voidbringers are (or believe that the war is done). It follows multiple characters (none of which are Heralds) and the adventures/politics/learning of magic and war, etc.
There is magic, but it's sooo unlike any magic (in function and description), that it's absolutely intriguing. :)

Phenomenal book. I've read the first one, I think there are two.

Ok, so as far as fantasy goes, Simmons hasn't written too many, if any. Illium and Olympus perhaps, but those are definitely scifi, not fantasy. I'd actually suggest Way of Kings, a series by Brandon Sanderson. You'd probably also find the Mistborn Trilogy highly entertaining.
Skyrim is a great game. I've not had a chance to play it much in the last year or so, because I really prefer to devote at least a couple hours to it, or I feel like I get nothing accomplished, and it seems like I haven’t had more than a few minutes to myself in that time.

Yeah, I'm gonna take a break from the series to try The Way of Kings which was recently made very cheap on amazon.
Pretty standard recommendation around here, but your request definitely fits The Way of Kings by Brandon Sanderson. Takes place in a world some people wield giant magic swords that can cut through anything. Main character is pretty much unparallelled in wielding a spear and [minor spoilers that are pretty much already implied by the fact I'm recommending it](#s "starts gaining magic powers, which is something not known to have happened to anyone in thousands of years." )
