Yes. This! I love Victorinox. When I was first learning how to cook (still learning) I bought the $200 Shuns (kept them because they look cool) but everyday I will reach over them to grab the Victorinox. What I like about them is also what makes them look plain. They have easily sharpened edges that stay that way, great price ($25 vs $250), and their handles are easy to handle when wet. Cannot stress that last point (and pun) enough. Whether you are cutting up vegetables or deboning chickens, being able to maintain a grip is the difference between your vegetable batons staying vegetarian or not.
This book was instrumental in my learning. And every now and again, I refer to it for something weird I need to cut.
I recommend the Knife Skills book. Lots of pictures and clear instructions on how to cut food. You can skip the part about the crabs if you'd like. :|
