Knives are so personal. Since you have some time, I'd suggest you "wind up" at some good kitchen stores and get to know what he might be interested in. I tend to cook more "peasant French" food than anything else, but I use a Chinese vegetable cleaver instead of a classic chef's knife. He may have similar quirks in what he likes- a sheep's foot paring knife instead of a standard, etc.

It's survived and thrived through a year of crusty sourdough and rye.
I used to use a bread knife that came with my knife block. It was awful. It tore bread and gave me awful and inconsistent slices. I also couldn't slice as thin as I wanted. With crusty bread, it would slide off of the crust and there were many near misses.
Now I use the Tojiro F-737. I originally wanted the Mercer Millenia 10 inch bread knife that was reviewed favorably by Americas Test kitchen. However, amazon didn't have it available on prime when I needed it (and I'm impatient). I looked up other reviews and Serious Eats gave this knife high praise so I figured it was a $22 experiment. It works great. I get beautiful even slices as thin as I want. I'd highly recommend it.
Get the Tojiro bread slicer. It's lethal out of the box, so be careful, but if you are careful, it'll slice all of your bread with extreme ease.
Great job, but if you plan to keep making bread, I highly recommend you spend $25 on this knife or something comparable. You'll be happy you did, it makes such a world of difference.
Line cook here. I consider bread knives as close to consumable knives as possible because they're typically not worth the cost to sharpen. I would suggest the Tojiro Bread Slicer F-737. Cheap and very, very effective.
You don't need to drop lots of money to get a good Japanese bread knife. I've had a ton of success with the Tojiro Bread Slicer which is $20 on Amazon.
In general, you shouldn't spend a lot on a bread knife because, due to the serrations, they are almost impossible to sharpen. It should be cheap enough to replace when it dulls.
Look no further than the Tojiro Bread Slicer .
If you think you have a decent bread knife that came with your chef's set, chances are you don't. We had two chef's sets; one was mid-range, and its bread knife is *horrible*. It's so thick and dull that you had no control over how thick your slices where, and often had to cut too thick just to get an even slice. Plus it would take some maneuvering and risk finger cuts to get the last few slices out toward the end of the loaf.
With this blade, I can easily cut slices that are 1/8" (3mm) thick evenly through the entire loaf. Treat yourself. Under $24
Go for the Olivia, it’s a great knife if it’s in budget for you.

Paring knives are pretty cheap, I’m quite happy with my victorinox one with a plastic handle.
As for a whetstone, if you’ve got $50 to spare, you should get a shapton pro 1k (ha no kuromaka on amazon) will do you right. Not much benefit to going much higher a grit finish than that on german steel.
I'm personally of the mind that you can do almost everything with a gyuto, so I'd probably just add a cheaper petty and a bread knife if you're looking for essentials. In terms of the site you linked, I guess I would get a 12-15cm global utility knife. They're not amazing, but you do have the gift certificate, and like I said, I don't think there's much reason to spend a lot on a petty, so the globals seem like a good bet. They're softer and tougher than what you'll find in a good Japanse gyuto too, so you can abuse them a bit more. The wusthof line they carry has full bolsters, so I'd stay away from them. To be honest, the rest looks like trash.
Edit: I don't see any good budget bread knives on their either, but I'd check out this tojiro bread knife from amazon or wherever else you can find it.
This is the one I use. It came recommended by SeriousEats and is very affordable ($19 right now!). Mine is still very new so I can’t provide context on long term use but I’m pretty happy with it so far - it’s elegant and sharp. Hope this helps!

A lot of people recommend this one, I bought it and returned it because there's no room for your knuckles under the handle:

A good serrated knife will still work better for bread. Most are pretty crappy though. I use this one.
I am in love with this knife we got. It is probably the only thing in my kitchen treated as well as my cast iron... Good tip on the spatula I'll check that out!
If OP does need a bread knife, and I would say he/she probably does at some point, I would enthusiastically recommend this one. $23 and it's great.

If you want a set I really like the Tojiro. Save you $50, same steel, and I prefer a normal utility over serrated.
Add the Tojiro bread knife and you’ve got all the knives a cook would need and you’re still $15 under the Shun set.
As mentioned (and since you said you were buying important knives separate) don't get a knife set just buy a knife block separately assuming of course you don't want to look into other storage options like a magnetic strip or in drawer/shelf holder. Someone mentioned the Victorinox (also a 10in version for the same price) for a bread knife and this is a solid choice. I also recently purchased a bread knife from Tojiro that I've been very happy with so far. Sorry i can't be more help with the steak knives as I've never been terribly picky with them and I have tended to commandeer a bunch from work when they get replaced.
