This book on the first 7 councils by Steven Need.
Learning Greek and Hebrew is great too - but to understand a lot of what theology students take for granted it's nice to see some of the history, theory, and texts that formed the foundations of what was being argued about in the first 6 centuries and then formed the basis for arguments from thereon.
