You don't. Those are extremely small wires that are nearly impossible to fix. It's cheaper and faster to replace the cables. The other end of that black wire that is twisted up connects to the chip with a push connector. THEY ARE VERY FRAGILE. Use a small plastic spudger or guitar pick to pry them off very slowly so you don't rip the connection off the chip.
Or similar. If all you need is the cable just about anything will work. I have bought both the cheapest options and name brand cables fro a few builds like this and they all work about the same.
Yeah, you wouldn't want to place the antenna onto a metal panel. Typically in a laptop they place the antenna close to a plastic panel, behind the glass screen, or near an opening in the metal case. I think on an older macbook model they positioned the antenna right beside the DVDROM slot.

You can get some RP-SMA to hirose pigtails on Amazon. There are several places in the black plastic top cover you can drill and install the pigtails to connect external antennae. You'll need to undo all the motherboard screws to lift it off the bottom plate to access the LTE card slot and connect the pigtails.
Once you get your pigtails installed the world's your oyster for antennae. I have a roof-top antenna on my pickup that gives me a very solid signal boost versus my cell phone in the cab.
I used this one on a hotspot I built last year. Again, what the other poster said, make sure the SMA connection is the same as what you have now (rp-sma in this case)

thats just a whip on a ufl antenna connection, fine to fly with but can be upgraded (also make sure to use a dipole on your receiver when using a whip for best performance). you can get a pigtail adapter for the standard rp-sma https://www.amazon.com/U-FL-RP-SMA-Pigtail-Antenna-Cable/dp/B005UWD0EG but that would pretty heavy on such a small quad.
