Unlocking Italian is a great starting point.
Le prime 1000 parole - 1000 most used words in Italian. Has activities throughout.
I take small group classes online through a language school based in Rome. No more than 10 students and I've come a long way since I started (also as a complete beginner). I can send you this school info if you're interested.
Once you've got a base, I recommend reading Short stories in Italian for beginners. There's an audio app that allows you to listen to the stories as well. Definitely has helped my comprehension. There is a similar book for intermediate learners too.
Complete Italian is a comprehensive coursebook that covers sentence formation, verbs, grammar, and more.
