If you want to use high refresh rates you're probably going to need to use the displayport connector. I have a 3440x1440 100hz monitor and while waiting for my displayport to type c connector to arrive i had to use HDMI which limited me to 50hz. I got this cable and now I have full 1440p ultrawide at 100hz.

The reason you aren't seeing options for custom resolutions or refresh rates is because the HDMI port uses the cpu's onboard graphics while the displayport connector (the type C on the left) uses the nvidia GPU (as far as i know).

Mine has the thunderbolt 3 port, not all hp envy have the same ports so please make sure which one is supported by your model!
I'd just get a simple cable.
Considering that there's only two ports to use, I'd find another dongle with all the ports you need, but also with USB-C charging.
