I build all my recipes at 5.5 gallons. It allows for trub loss in the kettle and fermenter. It might not help you at the moment, but it's something to look at in the future.
As far as scale, I use this one.
I use a smaller, more accurate one for my hops and other small things.

It's really accurate--I've checked it against the post office scales a few times. I'm on my second one--the first one broke after 5 years of kitchen, soap-making, and flipping use.
I am looking for a good-but-cheap jewelry scale tho if anyone has any suggestions.
