I love scramble tofu. I get those vegan pepperami knock offs from Holland and Barratt, if your not veggie normal pepperami would be fine, chop em up really small and put them in the scramble when finished. They have loads of flavour.
The block tofu you can really defrost and re-freeze multiple times, so sometimes when I defrost the block and seperate into portions, I'll marinate the tofu in spices before going back in. But you'll need to know the recipe to know which spices you want to use, and label the boxes.
You can't go wrong with a good stir fry. Don't be put off by the look of frozen tofu, when your frying it, it starts to look more like how it would usually look, and you'll know when it's done if you just taste a little. I sometimes use recipes from a cookbook I got on Amazon, I'll modify some to suit my tastes though.
