Great knife.. seriously. Award winning, etc.. cheap cost, amazing quality. Reddit always recommends this knife whenever people ask about one to own.
This is a great knife, but I honestly don't use it that much ... I almost always reach for this instead. It's smaller, lighter, and feels better in the hand.
Instead of the Chef's Knife (which is fantastic) get the Victorniox Santoku. Around the same price, but it'll serve you in many more ways (can do meat & veg) It's the one I use at work, and I love it.
Nearly all of my knives are victorinox. I need a few more now (attrition due to moving, theft, and stupid people dropping them), and I'm gonna get the 8 inch you mentioned, and try out this santoku I've been wanting for a while.
You might consider the 7" Santoku to suit your purposes. 7" is about the perfect size for the home chef, IMO, and the santoku shape and blade are more versatile.
