My build is an NR200P with a 5600X air-cooled with a Scythe Mugen 5 and a Sapphire Nitro+ 6900XT mounted horizontally. My rear fan is intake to help the air cooler, one top exhaust fan towards the front, and no intake on the bottom since the GPU is close enough to the mesh.
I've gone back and forth with the glass or mesh side panels, and honestly even with the glass and a 6900XT I had no issues with temps. It runs a few degrees cooler with the mesh certainly, but even with the glass nothing gets over 80c. In the end I decided to mount my case under my desk with one of these, and since I can't see it anyway I kept the mesh panel on.
I'm planning on doing a similar build (same oil and everything, but with a birch block from Home Depot). Was curious how much space there is behind/in front of the metal bar under the tabletop? I am hoping to install something like this (https://smile.amazon.com/VIVO-Under-Desk-Adjustable-Bracket-Holder/dp/B078JXC9X8/) to hold my desktop.
Also, separate question, how difficult was the finishing process? I don't really have anywhere other than my small apartment to do it, so I'm hoping it is doable indoors?

Nothing fancy and does the job. A little tricky to adjust the straps once the case is in there, but I like how the PC is away from my ear so it feels quieter and as a bonus allows the bottom fans in the NCase extra room to exhaust out. Also it’s great because the PC just moves with the desk when I adjust the height, so no worrying about cables like if it was mounted stationary on the floor.

As I have top fans exhausiting I did first glue and screw 2 pieces of wood to the desk, to then attach the mount to, so there's about 2-3 inches of air atop the case for airflow
Take extensor cable from wall, tape it bottom of your desk with 2 sided tape. Route cables, so they are right under table, and u are good to go..

I am planning to buy a desk with a 1 inch thick carbonized bamboo desk top. I would like to mount my 15 lb CPU to the underside, most likely with this mount. What do I need to know when working with bamboo? Do I need to worry about the bamboo splitting when I drill into it? What length of screws should I use--would less than 1 inch screws be enough to support the weight?

At load, no deshrouding, no additional fans underneath and no undervolting (although I'd like to give this a go at some point). The GPU is run at stock config, no tweaking (e.g. OC'ing or undervolting) whatsoever.

Let me know if I'm not testing properly. Or if these temps are unusually low, the only other thing I can think of is that I've now mounted the case under my desk using this. Which could mean less restricted airflow sucking air into the bottom of the case? I'm happy to do another test with it sitting on my desk if you think that would make a significant difference. Although the case feet on v6+ of the M1 are taller (15 mm) compared to previous versions which would help.
Yeah I'm having to go through a similar trade-off. If I had to choose (which it seems I do!), I'd prefer to keep the Gigabyte Aorus B550-I and NCase M1 over the C14S, so I'll probably just go with a U9S.
I'm not planning on doing any overclocking, and on popular advice I will aim to undervolt my GPU. So hopefully the U9S will provide more than sufficient cooling for that.
Also, as I'm planning to mount the case under my desk with this mount, another option I have is leaving the top cover off and keeping the Aorus+M1+C14S combo.
I have a desktop and I used a "CPU Mount" to mount my desktop under the desk.
You might have to look around to make sure you have the right size mount for your subwoofer and you might get a different sound signature off the ground, but i'd imagine it would look really clean.
I tried 3M strips to stick my 2.0 speakers under the desk but it was just too strange sounding... But since the subwoofer is already under a desk you might luck out

It looks very clean, although the initial hang was a pain. The straps make you work a bit to get them dialed in just right.
It is also extremely secure. I used a furniture pad (the kind you put on the bottom of your furniture for use on a hardwood floor) on top of the tower to keep it from being jammed against the wood of the desk. You can see that here:

Yep I got this one as recommended below which I'm planning to use with these straps. Just waiting on a new desk and will be able to hang once I have it. Dimensions of everything look good. Already built in the normal (fans at bottom) orientation in my T1 so almost ready to go.
