I used this VIVO Extra Tall (39 in) mount from Amazon. I have the shorter one for my ultrawide and they are mounted on opposite sides behind so they can be adjusted independently.

They're the longer version of those cheap Amazon monitor arms everyone has.
iPad is clamped to the right pole.
The super wide is on its stock mount and the top monitor is on this overly tall option. I liked it because you can take some of the rods off to make the mount as tall as you need. The problem was it ended up need to be 1" high on the final rod so it ended up still looking too tall:

Its not the best and it drifts a little over time due to the weight of the monitor, but it does job well enough until I get something better.

As for the bottom, I am using a TV wall mount I purchased from walmart. i think its a ONN wall mount. Not the best but it was only 40 bucks or so and also works well. Built for a TV so no drifting or anything.
It's not a dual monitor stand, it just holds the 27" monitor on top. The bottom is the Samsung Odyssey G9 49" and it's just on the stock stand

The top monitor is mounted to this, with the 39" tall pole version on the left side of the butcher block. It says up to 27", but it works perfectly for the 34" G5, as it's under the weight limit of 22lbs. The G5 is super light of only 12lbs.
The G9 is actually still on it's original white stand. I've yet to find a proper mount for it.

How much vertical adjustment do you need? I don’t really change my monitor height at all (distance between elbows and eyes doesn’t really change sitting vs standing) so I’ve been happy with the VIVO Extra Tall Single Monitor Desk Mount Stand (though I paid a lot less than it is currently). I didn’t need it quite as tall as it’s max so I just use 2 of the 3 vertical pieces

And a super cheap fleximount brand arm, but I wish I had bought a nicer one. Adjustment is very stiff, and i have to REALLY tighten down the adjustment for tilting the monitor forward and back on just a 27", otherwise it slowly falls down. If you plan on adjusting them at all, definitely go for a decent arm if you can. Make sure people say it can hold an ultrawides, you can usually find out in the questions and comments
Vivo offers a similar stand to that Ergotron for a little cheaper. I think it's meant for a Sit/Stand setup that isn't attached to a standing desk, because it has two monitor arms and a keyboard tray---

Looking for that doohickey I just stumbled upon this. Vivo STAND-V011. I can probably use this in conjunction with monitor arms I already have to attempt the setup I was looking for, and it's a lot cheaper than the other thing I was looking for (~$250 to the Ergo's ~$300), it's probably worth giving that a shot and leaning on Amazon's forgiving return policy in case it doesn't work out how I'm hoping.

They both have the exact same pole diameters, so the arm for the UW fit over the standing desk mount.
The amazon basics is a really good arm. The other is great, just wish the clamp was as wide as the amazon arm (that I can't use for this combo) for extra support. No problems with the weight though.

It's a Vivo Extra Tall monitor mount. The leg rest I actually picked up from Goodwill ages ago, not sure what brand it is. For similar ones you can search for a Lounge Chair Foot Rest.

It's sort of a frankenstein, but I can't really recommend it. If I fix the tabletop caving in, the arms just barely support my monitor, the springs are tightened to the max.
None of these are rated even close. I already had these for my previous setup so I just tried to see if they would still work, and it somewhat does. But if I were buying new I would definitely choose a better option rated for the weight of the 49"ers

TV is sitting on its included stand, I might pick up the ergotron stand to see how far back I can push the TV, though I think it's in a good position for my use case. If anything it'll just clear up desk space if I get an arm.
The tall monitor arm as you can see required me to attatch the power brick for the UW monitor since it wasn't long enough to reach cable tray; I could get an extender but why waste money when I can do something as simple as applying rubber bands lol.

It's actually not a dual monitor mount, it's a single tall monitor mount and the bottom monitor is on its own stand.

The monitors are Asus Predator 27 inch. One is 1440p 144hz, and the bottom is 1080p 240hz. Both are color accurate, as I do productivity and gaming.

Ok, so I couldn’t find any perfect options here but I’ll run through what the outcomes were at least.
Part of your problem is most monitor arms have around a 12” range of height adjustment but most 27” or 34” stacked monitors are around 18” from centre-to-centre which means you’ll always have one monitor overlapping 3” of the other if you go that way (and that’s assuming your VESA mounts are actually centred on the monitor).
If you have a wall available behind your monitor, and some reasonable DIY skills, you can mount both monitors on a rotatable TV mount and turn them around as required (remembering to turn one way in the morning and then back the other way at night for the cables). If your computers will be connected separately to each orientation then you can flip your screens with ease and your computer will remember how you had set them up last time when you log back in. A 34” monitor is around 500mm on the diagonal so you’d probably need to have your monitors a little higher than usual to not bottom out when turning unless your TV arm also had height adjustment.
An even less elegant solution would be to mount a tall vertical pole mount to each side of your desk with a single arm on it and then when you need to swap their position you can swing the arms out of the way and physically adjust the stands up/down, as required. It’s a much more manual process but it may work for your budget and space.
If you wanted to compromise on gaming performance specifically then a possibility is consider the 34” LG 5K2K 34WK95U ultrawide as a primary monitor - you’ll still have the ultrawide format, the 4K for text and then you can downscale to 2560x1080 (or 4096x1728 with CRU) for your gaming needs (the refresh rate will still be a low 60Hz unfortunately).
Otherwise, to compromise on 4K text quality then my recommendation would be to go with a 144HZ or greater 34, 38 or 40” ultrawide 1440p monitor instead and sit a little further back.
As a last resort there is the option to have a custom heavy-duty rotating dual monitor arm built to suit - but this will potentially cost as much as a new monitor.
Realistically you may be better off putting your 4K monitor in portrait mode beside a 34” 1440p monitor which will take up about 1150mm and would leave you just enough room for a desktop PC on the side and you can raise your main monitor up slightly and put your laptop in front of it like this

For the monitor mount, you might be able to use a single pole with a couple additional arms (eg. pole, short arm, long arm). I couldn't easily find a max total capacity for that, so that's something you should keep in mind. You should also verify that the arms are long enough. Alternatively, you could always go the route of two separate mounts.
For your desk height, it will vary depending on height and your particular body type (some people have longer legs or torsos). The goal is to have your feet slightly forward from your knees and flat on the floor. Your arms should be parallel or slightly descending to desk. Basically, your knees and elbows should both form a roughly 90 degree angle.
My advice: If your desk height is adjustable, set your chair height based on your legs first and adjust the desk height for your arms. If it's not, start with your arms and add a foot rest if needed.

The monitor arms are from Vivo (the one on the right is the “tall” one and the one on the left is the “normal” ones) The other pole is a mic arm (Blue Compass); I leave it straight up like that until I need it (conference call, video games, etc), and then I just pull it down.
