I have used this on an odd-shaped monitor, it works decently.

i had honestly considered something like this https://www.amazon.com/dp/B079957W6Q/?coliid=IMGVXOEGIKMBM&colid=1QATHTWI9YWBG&psc=1&ref_=lv_ov_lig_dp_it would let me use my portable displays as a monitor extension but not so permanent that it is a headache to take the screen elsewhere if i were to travel.

I've come across these on Amazon before, but have never personally tried one. You could use this adapter to mount onto some type of ergotron arm between pen or display only use. You may just need to be careful not to put too much pressure on the edges of the display itself when transitioning.

Yeah they sell adapters on amazon that basically clamp on to the monitor. They are inexpensive Here is an example

I have two Acer G257hu monitors and plan to get a third. The idea is to have one on top of the other horizontally and the third turned vertical and to the left of the other two. I have looked at getting this vesa mount adapter for them.

What are some good triple monitor stands that would support what I'm trying to do? Thanks!
