start with some soft wood like Basswood and then carve the wood away :^)
But actually there's surprisingly few video tutorials on it but here's two decent picture tutorials:
I would also recommend getting nice little carving knife set off amazon rather than using just a pocket knife, you can find decent ones for ~$10
