I don't use the rubber gasket or clamps, I just put the glass lid on so it can breathe. I keep it in the fridge during the week then take it out on Friday morning for a feeding so I can use it for bread over the weekend. It goes back in the fridge Sunday morning after 3-4 feedings total. I'm not very precise about the whole thing but it's been working well for about a year now.
