Old school classic: https://www.amazon.com/Texsport-Willowbend-Person-Backpacking-Camping/dp/B000P9EZPW Slightly heavier, $30, packs slightly larger (look into treking poles instead of provided support poles), roomy for 1, weather proof, some mild condensation. Time-tested design.
Both styles require being able to put in stakes, but setup is quick and easy in both. "Instant" tents are not the least bit instant, but they are heavy and bulky, so I'd recommend against them.
If you anticipate bad weather and want to hang out and cook under cover, bring a tarp to set up at your cooking/seating area.
Got my fingers crossed on a good backpacking tent so I can quit using my $50 Amazon special.
