Zojirushi mugs are awesome. I had a Contigo one before and the Zojirushi one blows it out of the water. No leaks and easily keeps stuff hot or cold for the whole day.
I find that two smaller high quality thermoses work better than one large one. When a large one is half full, it seems to lose heat more quickly. I’ve found the Zojirushi insulated bottles to be amazing, and I prefer the 12 oz size, though the larger ones are great as well.

Hi, I have a very compact 16 oz mug (they make a 12 oz model) that is insulated and extremely spill proof. It does have a stainless steel interior and personally I have never noticed any bitterness. Their stainless steel is a special type called "slick steel" don't know if that is enough to make it not bitter but here is a link to the 12 oz mug.

It’s a bit pricey (do shop around! And it’s in different sizes). Lid locks if you have liquid in it, and to ensure it can’t accidentally open in your bag. It keeps hot things hot incredibly well. I never thought I’d be excited about a thermos/to go mug but here we are.
Zojirushi Travel Mug. Cons is that it's a weird shape for drivers. Besides that, I've forgotten hot coffee at 9 am and drank warm coffee at 5 pm, it comes apart into pieces nicely that are easily washable, and if you have to take pills in the morning, you can tuck them in between the top of the lid and the removable rubber stopper bit.
Zojirushi Travel Thermos. They make a model the fits in cup holders. I have been using the original model for about 7 years now.

Zojirushi mugs are a little more slender than most so they should fit in any cupholder. Definitely don't leak and will keep things hot/cold for a crazy long time.
I use one of these. It has a lock on it, plus it's just one button to open it all the way. Completely leak proof and fits into a bottle cage easily. It's a bit slimmer than the cage, so it does rattle a tiny bit, but at least the paint doesn't scrape off.

I use a Zojirushi mug that i got for $20 off of Amazon. It's leak proof so you can toss it in your bag & it keeps it piping hot all day.
My Zojirushi seals up nicely and will still burn my tongue after lunch. The locking lid is great.
Searched a lot and decided on this in black. Very happy with it. It has a small enough circumference to fit well in the hand, a comfortable drinking mechanism, is made of solid materials, and functionally keeps coffee at the same temperature you put in all day.
My husband has this one and uses it all the time. Keeps his coffee hot all day. One time he forgot to empty it and the coffee was still warm the next morning. It comes apart easily in 3 parts and is dishwasher safe which is cool.
If anyone wants that bottle, the author drew it in such detail that you can easily identify the model.
Both my wife and I love this mug. Coffee stays hot for hours. Costs a little more but it’s top notch.

Are you going OTR or regional? If regional? it would be super easy to use a great thermos like this. It will keep coffee hot for many hours. Or get it anyway to keep your coffee warm.
How are you going to heat the water?
If you are going OTR, do you have a sleeper? Does it have 110v AC power? If so, I would go with a Capresso Infinity grinder. Very quick to use, and not too much $ to replace if it gets tossed about and broken on the road. You can find it for a little less $ from Bed Bath and Beyond with a 20% off coupon.
As for the aeropress? That sounds like a good solution. I really like mine.
