I am trying to get my Neo to emulate a keyboard and send my text to iPhone.

Surely, I bought these as they fold flat and are wide enough that one works. I put mine on the flat part just over the battery door, so the flap folds towards it and it's not in the way for battery changes etc.
My Neo1 works with my iPad Pro over this USBC cable, I haven't tried it with my Neo2 but I would assume it would work. I told my iPad to not add the keyboard and it worked as if it was connected to a Mac. I'm not sure if you have the lightning port if that changes things.

Well the main way that I would recommend to make it easier to read would be to use the largest text size you can as well as switch the font to times roman as it is bigger and bolder than the other fonts for some reason. Good lighting always helps and you could buy a small usb light thing, something like this:
I looked into a couple backlight mods, and was not really interested in going through that much trouble. Instead, I ran power to the “printer” USB A port. There’s a common ground on the port already, so you just have to run one wire. With the port powered, you can plug in any kind of little USB light you want. I’ve tried a bunch, and I’ve found a single LED is most efficient and I think provides good light. I have these on my laptop and they work great. I'd imagine they'd be just as effective for the AlphaSmart line.
For free:
1: You can try to lay a rubber band over the screw top and press into it with a screw driver and it might create enough friction to remove the screw.
2: Put a dab of super glue on the head of the screw, then place your screw driver into the superglue and wait for it to dry, then try to remove

A raspberry pi is basically a little computer. It require you to attach a monitor (which you can find many raspberry pi compatible monitors are amazon). As far as the keyboard goes, a raspberry pi has a usb out, so basically any keyboard can be used to connect to a raspberry pi. There is no soldering involved, as far as battery life goes, most people use the same battery banks that you can buy to recharge your phone (I believe you need to make sure it has a 5v output if I remember right. The battery life depends on the size of the battery you buy.
It can be a little complicated if you have no experience with these kinds of things but if you are interested don't let that deter you. Raspberry pi's are made to require very little technical know how and with a bit of research you should not have any trouble putting one together.
Ideally you would want a low power raspberry pi zero so that you could run via battery for a while but I don't see too many pre made kits for it right now (they just released the zero 2 and I don't think there is that much supply now)
this would be more of a plug in kit but its a good place to start and pretty cheap and is compatible with raspberry pi 4. You would need this a raspberry pi 4, a usb keyboard, and i think you might need a power plug for it
What kind of adapter are you using? I use these with my M1 Air and haven't had a problem yet. Sometimes the adaptors get wonky; I had a usb hub that used to knock my wifi out of I plugged it in the first port and wouldn't recognize my usb mouse unless I tilted it but used flash drives fine.
I have an alphasmart pro alf-b01. I bought a PS2 to USB adapter and it did not work. The S-Video male output looks to be what you need. I'm online looking for one as I am in the same situation as you. I got a great deal on the machine, $15, and it works awesome!! Minus that I can't transfer the info. Can't use it unless I can transfer the info :-(

personally i use a clip-on rechargeable light and just clamp it on the fat end next to the screen, just b/c i don’t want to mess with the battery life

If you think you might want more light, this is a good option, but at high settings it draws more power than I would like.
If it's draining due to poor design (phantom drain), then yes, it's better to remove them. If it's draining because they're cheapo generic NiMH batteries self-discharging, then it's easier to upgrade to AA Eneloop NiMH batteries:
