I would advise not buying anything until Apple Car Play and Google Android Auto bring their car solutions to the mainstream market. Your standard head unit is about to go the way of the dodo.

They're not all the same, a lot of them are missing part of the circuitry required for some communication protocols, the most obvious sign of this is they won't work with most Ford vehicles
BAFX are the cheapest I know of that have all the protocols supported and can handle the faster update rate in torque.
I just bought THIS ONE last week. I liked that it was Wifi, rather than bluetooth.
I paired that up with Dash Command on an old iPhone that I had.
Now I have all sorts of info that my old (base model) truck didn't have a display for, plus I can see & clear codes that come up etc.
Try the dye first, you might not even need to evacuate your system. Buy a kit like this.
You might look at some of the newer head units on Amazon that are essentially an android tablet interface bolted to a set of amplifiers with a decent radio. A lot of them have a backup camera as well.

Not in the mods category but i would do a drain and fill on the trans fluid if it hasn't been done yet. If you keep the fluid fairly clean the transmissions can last, but they have very low tolerance for dirty atf.
The atf is not a normal dexron 3, i've had good luck with castrol transmax import vehicle. You could also go with nissan oem fluid aswell.

As far as mods go, if your car has the bose system be aware that it is separately amplified from the car's deck so you'd need an adapter to hook up to it.

absolutely - IMO this is by far the best and probably one of (if not the) cheapest options out there.
This is the adapter I got since (at least when I got mine) it had more universal compatibility than some others on the market - particularly with later ford vehicles and I planned on using it for my '05 Mustang so this was a requirement.
So far I've used it on numerous makes/models and never had any trouble. Biggest problem I had was remembering that I had to sync with my bluetooth adapter via the options menu before the app would detect it after I got a new phone and reinstalled torque.
Ah, you know what, I just realized you're trying to use phone apps to do this. You used this app (https://play.google.com/store/apps/details?id=de.wgsoft.scanmaster&hl=en), right? The PC based version seems more capable (and you can use your Bluetooth dongle with it just the same), but I didn't see anything obvious for VVT/OVC stuff. I shot an email to the developers and asked specifically about support for extended PIDs, linking them to a list of the actual Subaru PIDs. The software can save/load a PID list, so there may be a way to shoehorn the extended PIDs into the software and use them.
