You could go with a gtx 1650, it's 4gb vram and is newer than the 1060, it also allows more room for future games having a bit more vram than the 3gb variant of the 1060.
This one is on back order and will be in stock again January 21st but its just over $200
Technically any RAM will be supported in your motherboard so long as its DDR4; but yes 3600mhz RAM is ideal for AM4 CPUs. Depending what games you play, or applications you use will best determine how much RAM you need, but in saying that if you wanted more there's no real harm in it.
I'd suggest starting with 16gb 3600mhz RAM, and if you feel more and can afford it, get more. I recommend these for their price https://www.amazon.com/Corsair-Vengeance-PC4-28800-Desktop-Memory/dp/B07RM39V5F
Yeah, it's really fucking annoying. A lot of SSD manufacturers expect the case manufacturers to supply the SSD mounting screws, and the case manufacturers expect the SSD manufacturer to include the mounting screws.
They're M3 x .5mm x like 6mm or 8mm long (depending on the thickness of the bracket).
Something like that. You can probably pick up something similar at a local hardware store.

Is this a good replacement?
Perfect, with that you can run pretty much anything. I'd recommend a GTX 1650. This one I linked is fairly cheap
For cpu you can buy ryzen 5 5600x.
For gpu 1650. ZOTAC GAMING GeForce GTX 1650 OC 4GB GDDR6 128-bit Gaming Graphics Card, Super Compact, ZT-T16520F-10L https://www.amazon.com/dp/B0881YZJ45/ref=cm_sw_r_cp_api_glt_fabc_VX7EAQSAGG4AAM3N70ZG
This is a list of my recommended parts

I have the exact same build, to be honest both the cpu and gpu are low end nowadays but in saying that my 1060 3gb is running stock and isn't performing too bad. Perhaps look on amazon for a b450 (or even b550) motherboard and Ryzen cpu combo, sometimes there's some decent deals.
Perhaps something like this? https://www.amazon.com/Matisse-Processor-Unlocked-B450-PLUS-Motherboard/dp/B091F51JGJ/ref=mp_s_a_1_3?dchild=1&keywords=motherboard+cpu+combo&qid=1633545134&refresh=1&sr=8-3
Or if you prefer to stay intel (your motherboard may not be compatible with 10th gen) https://www.amazon.com/i5-10600K-Desktop-Processor-Unlocked-Motherboard/dp/B08W1SGKS9/ref=mp_s_a_1_4?dchild=1&keywords=motherboard+cpu+combo&qid=1633545134&refresh=1&sr=8-4
This is the original computer I purchased, only upgrade is an old hard drive from the last computer and the RAM. https://www.amazon.com/gp/product/B07NSVH71D/ref=ppx_yo_dt_b_asin_title_o03_s00?ie=UTF8&psc=1
yes you would, this is a decent set of sticks for a reasonable price

oh now thats interesting, i noticed the one linked has wifi integrated to the mobo, any difference, other than that and this one?
i do already have an external wifi antenna, and i've run a cat6 cable to my computer anyway.
Found this combo for a good price and that CPU would be better suited to the gpu and is more up to date
