My teacher showed me this app, it has an iOS equivalent but I don't remember the name. There you can search for a kanji and it'll show you some real examples. You can toggle between different styles, such as kaisho and gyosho.
No sleeves! The size of the sheets would not work well with sleeves. It does demands a gentle touch due to the frailty of xuan/hanshi/other calligraphic papers, but it works
Not really a beginner recommendation, but I bought 新書道辞典 recently and it changed my life. It's not focused on kaisho, but it's a very complex resource and a great reference. It features ~4,500 characters in various styles and scripts, from ancient scripts to cursive styles. There's also a part on kana, a chart showing lives of all the listed masters on time axis, and God knows what else. It's very mind-opening and absolutely worth it.
However, this is not at all a textbook for beginners, it's a resource for reference.
It's a practice scroll. You use water, and when it dries it disappears.

These I can reccomend for beginners. They are supple but not very soft.
Not washi, but I've enjoyed using this paper a lot. Doesn't crinkle at all, and very easy to brush on.
