Try openboard as an alternative FOSS keyboard. No swiping but everything else works pretty well. If swiping is a must, check out AnySoftKey. Which is very customizable but seemed a little less stable for me
I don't use Gboard, but skimming through Google's privacy policy I found this (not so shocking):

[...] When you’re signed in, we also collect information that we store with your Google Account, which we treat as personal information.
Google's definition of personal information:
> This is information that you provide to us which personally identifies you, such as your name, email address, or billing information, or other data that can be reasonably linked to such information by Google, such as information we associate with your Google Account.
I believe we may as well add photos that are tied to your Google account to that list, for example uploaded to Google Drive or a profile picture of yourself.
Then it continues:
> We also collect the content you create, upload, or receive from others when using our services. This includes things like email you write and receive, photos and videos you save, docs and spreadsheets you create, and comments you make on YouTube videos.
If you care about your privacy and have any leaves of eventually completely leaving Google services or at least reduce their usage then I suggest looking into alternatives. I vouch for AnySoftKeyboard—a free and open source heavily customisable keyboard software.
Since you mentioned changing the device's language, are you using Android? If yes, what software keyboard are you using?
There are multinational keyboards available which allow you to easily switch the current language, a free and open source one is AnySoftKeyboard (note that it doesn't work properly with Polish diacritics in 16 key layout due to a rather bizarre choice of their placement).
Weird, search on F-Droid doesn't shows the actual keyboard but the language packs. I tried the website and it's same for me, had to go through AnySoftKeyboard's official site (https://anysoftkeyboard.github.io/), anyway this is the one you're looking for: https://f-droid.org/packages/com.menny.android.anysoftkeyboard/
Edit: Actually it is listed as "Israel 64 BDay Theme" currently, so searching AnySoftKeyboard doesn't give out the required result.
Je vais faire mon gros relou made in r/privacy, mais à l'instar du clavier Google, Swiftkey dispose de permissions un peu trop étendues pour un simple clavier (l'article date, mais la problématique reste la même : ces claviers utilisent ta connexion internet pour envoyer des données).
J'utilise personnellement AnySoftKeyboard. Après, je n'utilise que des dictionnaires anglais et français, et donc rencontre, je pense, beaucoup moins de soucis qu'avec des langues avec des caractères particuliers.
I just installed ASK (AnySoftKeyboard). It's pretty dope. Has an uber shit-ton of options. It's part of FOSS. I'm actually surprised it's allowed in the Play Store tbh.
Autocorrection feature can be said to be in line with its competitors,although I myself never use it as I often converse in 4 languages without switching to the individual scripts.I just find the autocorrection feature aggressive,so I turned it off. Now, I contend myself with just the suggestions which I dont use at all(most of the time), although they can be handy when you want to double check a particularly diabolical word.
Unique words which you use are automatically added to the local library,which can be deleted whenever you want.

I like AnySoftKeyboard. F/OSS, totally configurable, and they're working on gesture typing (which is not quite there yet, but likely will be soon).
