Ugh, wall of text. One response might be tl;dr, but if you really want to engage, here are my thoughts:
Jeremy regards keto as "complety moronic," while recalling his method of "starving off the weight." You could go on the attack there, but it seems like a rabbit hole. In essence, his argument is that someone on a keto diet won't have as much energy as someone on who is "hyped up on quality fruits."
It's difficult to prove or disprove this argument. Yes, you can look for studies comparing self-reports of "energy level" from people who eat a keto diet and people who eat a raw fruit diet, but I'm not sure they exist, and it would rapidly devolve into "let's debunk the research." So, I'd respond with something like, "Maybe so, maybe not -- Neither of us can prove or disprove that point. My short-term goal is weight loss. Once I reach my desired weight, I might start thinking about endurance and energy."
Chris is offering nigh-religious arguments. He begins with a "simple fact" that is neither simple nor fact. For example, we could look at the Inupiaq of the Arctic (featured on Medicine Men Go Wild), who eat absolutely no vegetation of any kind, yet are some of the (physically) healthiest people in existence. If you can get Chris to admit that environment makes a difference in nutritional need, it invalidates his premise regarding fruit and physical health. He also argues that fruit is essential to his emotional and spiritual health. There is no way to win that argument.
