I use CueRipper, which is part of the CueTools package. Like EAC, it is geared towards secure ripping, but it's actually easier to use (much less stuff to configure).
yup it's often over looked. No point using flac if you find a few months later there are glitches from the ripping process.
I think start with CueTools ripper (http://cue.tools/wiki/CUERipper) and have a play around with image or tracks output and rip a couple of disks especially 2+ disc and VA releases to make sure the folder structure is what you want.
There is a slider under the test and copy that controls the error checking on the rip, burst means no error checking. secure means it will read twice and compare, if the second read doesn't match it will reread and try and get a match. paranoid means it will read the data 4 times for a match and if the 4 reads don't match it will try and get a match. the higher the mode the more demanding it is on the CD\DVD drive. You can also use test and copy in burst mode which is like secure mode but you'll need to manually check the checksums in the log match, basically reads the whole disk twice and writes the each reads checksums to the log, if they match then the rip should be good if they don't then you need to rerip again in secure or paranoid mode.
