Pictogram - A tool to change icons in Big Sur for those of you who want uniform icons
IORegistryClone - Utility to browse IO registry with a GUI interface, it can be useful for patching features such as CPU power management, USB mapping, etc
I heard about Dozer (open source & freeware) which does this but I've never used it. I already owned Bartender. Bartender is a terrific app.

HiddenBar (AppStore) and Vanilla are both paid apps, but good as well.

This is Bartender 3 which perfectly pairs with MeetingBar.
Or its opensource alternatives Dozer.
Finally I found Menu-Bar-Dock and Dozer, I think in combination may come very close to what I want. In any case will keep in mind CustomMenu for the future, it looks awesome!
A couple to add that I regularly enjoy:
Battery Moniter - serves as a free battery replacement where you can see the time until full/empty as well as battery health straight from the menu bar (includes mAh if that interests you)
Dozer - free (and open source) addition that adds dots to your menu bar, when you click on the right dot everything to the left of the other dot disappears/reappears

Vanilla felt a bit... clunky for me. I dunno, there was something that caused an issue, I think it's animation was weird or something? Anyway, I switched to Dozer: https://github.com/Mortennn/Dozer
