pdf files are pretty complex beings there is no set way to deal with them, e.g. text may be stored internally in a completely different sequence to what it appears.
If you can copy blocks of text, then copy columns into excel and if you're lucky it works. If the columns are not fixed width there's still a change that excel will recognize the white space as delimiter. If that doesn't work, your best option is to get a text editor with column edit. Copy the data into it and add appropriate delimiters. (emerald editor is a good open source editor with full column edit - ctrl+c will enable column edit IIRC).
