The issue with stuff like Pidgin and Instabird is that you're making insecure protocols an option, basically forcing a mess of options and protocols at users who ideally wouldn't know a thing or two about security or protocols.
This results in a complicated initial setup procedure that scares away people, and a cluttered UI that confuses others.
With Tox it's just run and you're in, secure, easy to use, and good looking.
And besides, we have a default client.
Note: I make every effort to programatically figure out if links originally posted to Reddit are still good, but it's difficult.
If the original URL doesn't work, or has been replaced with something else, please help out by searching the Wayback Machine for the URL and posting a contemporary link if you find one. There's also a Chrome Extension which makes this process easy.

OP mentioned Pidgeon IM, and I should add, incase you haven't used it, its a very mature, multi-platform, and full featured client. You really can't go wrong there. But, if you wanted to give your users a few choices there are wide range of FOSS or free clients out there for XMPP. My personal preference is Instantbird, based on the Mozilla platform.
I use Instantbird on a Mac.
I used Adium before, but it felt so tiny and has so many settings. Instantbird is far from complete (no file transfer), but it does feel clean and simple and chat just works (because it's libpurple-based).
While this may make no sense: Adium feels like the old Mozilla Suite where Instantbird gives me the Phoenix (Firefox) 0.6 feeling.
