I'm afraid there is no solution other than getting a VPN or building a VPS.
Both Coursera and edX are definitely blocked by the Great Firewall (GFW) in China, with Coursera being almost completely blocked and edX being partially blocked because it hosts its course videos on Youtube.
If you need a reliable proxy to bypass GFW, you could try Google Outline, Shadowsocks, V2Ray, etc. VPS can be provided by Vultr, DigitalOcean, Bandwagon, etc.

It uses traffic obfuscation techniques so that it's not easily detected. Even works for China.
I think once you use this, your main exploit would be big-mouthed students. If I remember anything it's that you can't keep a secret at school.
What LordGeneralTimmy said is accurate and perfect. I had the same requirements you’re looking to fulfill for a similar reason. I went with setting up and OpenVPN server. It took me about 30 mins and it was up and running.
I would also offer Outline VPN as an option. You can setup a small VM or even just an app on an Ubuntu box to run Outline VPN server. From there, you can use the Outline VPN client to connect. You don’t need another house to go through with this option, you can get a low cost AWS or GCP account and have it always running for you to connect through. I have an Open VPN server at home and Outline VPN servers running in AWS and GCP.
Trying to understand these protocols is a headache for novices. So I use jigsaw's outline manager to deploy and manage shadowsocks, it works with both outline client and shadowsocks client.
You obviously gave it much more thought than me.
Although I have my doubts (in PS) - I will reserve my opinion, until I have a more holistic understanding.
PS: e.g. 1) you pay for vpn normally with a visa, and they definitely log this information. Or you can buy it anonimously with bitcoin, but so you can buy a vps. 2) It's meh security argument that depends on proclaimed goals and reputation of your partners (we both used it). edit: I would add one thing though. I think a good general advice would be Not to beseek free vpn service.
Not free (it will cost you $5 a month) but check out Outline vpn by google. It is made to work through VPN hostile networks and is pretty easy in that you don't have to wrangle any code and you have a working shadowsocks vpn in a couple of minutes.
