Check out PandaDoc. You can create beautiful templates with tables that calculate. Use the Content Library to create various custom pieces that you want to pull into your documents as needed.

Your options idea is great but don't get too caught up in the software side of things. Maybe just use your software for the quote + options.
I would also send a professionally designed (mini brochure style) PDF which reinforces benefits. Remember, while your appealing to their logical side you also need to appeal to their emotional side. Therefore, I suggest you find suitable visuals for this document.
