Doing things like these manually are very good learning opportunities and I would recommend it. However some people just want to get stuff working. For those that want the latter there are some things available to help you do this in an easier fashion.
Bytesized Connect uses Docker and let's you install applications in Docker containers keeping things isolated and neat. You require a free Bytesized account but once you have that installing the mentioned apps is just one click away.
Quickbox is similar however it doesn't use container isolation and it pretty much takes over your entire server/pc. It does not require any external accounts though and the web-interface can be reached right on your server. It is also a bit easier to get things working since there is no container isolation.

First time setups require you to actually be local to the host running the container. If you don't have a gui on the host you'll need to setup a ssh tunnel to the server.

Buy a cheap dedi server, OneProvider for example and then install Quickbox or Swizzin as they both offer rtorrent/nextcloud/many other apps as one-click installs.

If you're looking for a quick and easy solution - install ubuntu server (no gui) and just install quickbox - it'll have all the download tools and even has OpenVPN supported right out of the box.
Stick nginx in front of Plex and use Cloudflare. This should improve your peering dramatically.

Personally i'd recommend getting a dedicated server (shared such as feral are shit).
Shared = lots of people share the same hardware.
Dedicated = you own it all.
Since you're in the UK then a Hetzner will be great, and they just so happen to be the cheapest for what hardware you get.

16 or 32GB RAM
8k+ bench CPU with iGPU
1gbps - 20TB upload limit per month
That's some amazing hardware for the price, I don't think any other provider can match it.
There is plenty choice on the auctions so if you only need it for UK streams then you can get the most basic one, 2x3TB, 16GB RAM 9.4k cpu for €20.17+VAT.
Set it up with RAID0 for speed/storage or RAID1 for redundancy and install Quickbox or Swizzin - Both scripts will set you up with a working install where you can easily setup Plex, rutorrent and many other apps.
Right now I have one running a wireless print server using CUPS, as well as a proxy server between my home network and dorm Network over VPN and one that acts as a portable wireless router that routes traffic over the same VPN. In the past I've used them as an all in one automated seedbox/Plex server (https://quickbox.io), android auto head unit for my truck (http://headunit.viktorgino.me), a VoIP server (https://www.mumble.com, like teamspeak but not as good), and a few different file and webservers.
There can certainly be a benefit. To test it out I got a server with Hetzner. They have notoriously bad peering with Comcost here. Without the cloudflare hack I would pull around 100KB/s with Hetzner at peak hours. With the Cloudflare thing it would almost always saturate my connection (4MB/s) to my apartment.
And no, cloudflare routes all traffic, not just DNS. So your stream will actually be routed through cloudflare.
Look at it this way. At least this is how it is for me.
Hetzner -> Comcast has shitty peering. But Hetzner -> Cloudflare has great peering. And the same goes with Cloudflare -> Comcast. It seems illogical that adding a extra step would speed things up. But it really does (for some people).
There are a few hickups doing this. Like some apps do not work with the encryption cloudflare uses. I have a few users with Samsung TVs and this didn't work for them. They could see the server but it wouldn't load. There is a hack for this to get it to work. But that introduces a whole new set of problems.
And like I said I just tested it for fun. My server with SYS was never touched and I nuked the Hetzner one.
I zipped up all the files I modified to get this to work. So if you want to give it a go let me know and I can send you those files as a template.

If you didn't already install an OS to your server, you'll have to do that first through their site. They should provide you with an IP and login details. Log into your server with those details using ssh. Secure your server by adding a new sudo user, disabling remote root login, and installing fail2ban (basic minimum security). Install quickbox and follow the configuration there.
Keep Ubuntu. You should start with OwnCloud or NextCloud (newest fork), or Seafile for a file host like Dropbox, Google Drive, etc. For your own Email server, play with https://mailinabox.email, and you could install your own seedbox with everything you want/need (Plex, CouchPotato), try quickbox.io but I prefer rtinst (https://quickbox.io and https://github.com/arakasi72/rtinst)
Roughly, you need 2000 pass mark per 1080p transcode, and as your CPU is 4900, you're only looking at 2-3 Transcoders at once. 2gb per transcode is more than enough, so 6gb for Plex and 2gb for everything else, a 8Gb Ubuntu box would fly..

It's awesome. It'll look after your Plex, and PlexPy, Sonarr, Radarr, etc. Even your torrents and newsgroup downloads if you do that. (You know, for your Linux distros..)
I reccomend getting a cheap VPS (Virtual Private Server). Instructions:
Step 1: There are many providers that have very cheap options. I have had good success with Linode $5/mo. Fully configurable and gigabit speeds so it won't slow down your internet like other VPN's. Other options include DigitalOcean and Amazon LightSail.
**Step 2:* Set up the quickbox script, ssh to your machine (use port 4747 NOT 22), and run box install openvpn
. Follow the instructions to get an .ovpn
file.
Step 3: Install OpenVPN on your devices. There are clients for almost any platform (just google) and import the configuration file you downloaded.
Step 4: Profit!

Lost the 1GBps that I had at Hetzner but gained better peering with the SYS.
Quickbox is pretty idiot proof. You literally run one command via SSH and it does it all for you. The only problem is if something breaks. You could even pay them the $5 and have it setup for you, that is 100% idiot proof.
Most people prefer QuickBox as it is way easier now with GUI to install Plex,etc. with one click
You will need to upgrade to Ubuntu 15.10 or 16.04 before installing cause it won't work on Ubuntu 14.04

I don't agree to the results to a certain extent because the long term implications do matter , we as a company don't sell dedicated servers and our servers are tuned to use 1 Gbp/s but if you are getting one you might want to keep these few things in mind
Are you really going to use that much bandwidth(most of our servers are heavily underutilized)
Is space more important to you than speed (most of the regular seedboxers :P build ratio over time than the massive spurt, especially on hard to seed torrents )
Do you seed for fun or for utility and betterment of swarm (both equally important just keeping it in mind helps you determine the amount you want to invest)
Do you need a dedi for your apps and you are going to install apps etc or just the idea of having a dedi makes you feel better , we stopped selling dedis because we felt we were doing a diservice to the community because of the high server underutilization. No bashing to the companies selling dedis though.Bash is pretty easy to learn btw .

There are no dumb questions. If you wanted to go hetzner auction, you get exactly what is listed for a given price.
They put the server into a rack and press the on switch. No OS is pre-installed and there is no data on the drives. You’re responsible for the entirety of the server. If you want a good hetzner setup guide, look towards the QuickBox Hetzner RAID-0 guide. This is a pretty in-depth guide on how to get the server setup with an OS and partitions.
However, I’d recommend using Debian 10 (for stability) and Swizzin as your base. Reason being it creates a user and is generally easy to get configured. You’ll need a domain, a server, some time, a dash of patience and be willing to learn.
Hetzner does not allow public trackers.
Sonar (TV shows) and Radar (movies) will scan your existing library and build up a database. You can then add new shows and movies you want it to search for. Sonarr will automatically download new releases of shows marked monitored and you can configure them to watch for higher quality versions as they’re released. You just tell it what shows and movies to find and they automagically appear in your Plex library. Like your own private netflix.
I recommend setting it up with something like quickbox.io, it configures everything for you. It’s $5 a month but they have customer support if you have issues. Personally I use cloudbox.works which is similar but based around using Google Drive for media storage.
This is a permissions issue on the Ubuntu Sever you installed. This is more of a Ubuntu\rutorrent issue than FreeNAS IMO. Potentially you could resolve with leveraging the ACL manager on FreeNAS. Is rutorrent running as a specific user with a UID? If so, you just need to set the UID value as having write permissions.
Side Note: Check out QuickBox. It's amazing and an easy setup for such things.
Would always go with nvme. If you need more storage you can order additional drives. The EX-42 are great servers. Think you have to be really unlucky to get one with i7-6700 instead of i7-7700 nowadays. To make sure, you can type in requests while you order, so just put in that you would like it with i7-7700 and samsung nvme-drives (the EX-42 comes with various types of nvme's, the Samsungs being the best).

Following your tip I used localhost:32400 and was able to see expanded options that app.plex.tv would not show. I have claimed the server fro menu items and some tips from here.
My username is now showing with a globe over it suggesting it is a remote server not a local one I tried to claim the server, it timed out and now my menu items have vanished. Clicking on my user name gives me the error:

Basically all you need to do is chose username, password and API key, the script do the rest...follow a youtube guide if you feel like it, but there are not really more to it, unless you want to remove root, or maybe combine hard drives, or something like that. Again, still possible to do with no linux experience just following guides.
I don't know that providers make that distinction.
If you don't mind getting your hands dirty you could grab an online.net dedicated server and install quickbox or swizzin. It's pretty cheap and you can use public trackers but the cheapest isn't fast enough to offer any transcodes. You could manually reencode video when you aren't using it though.
QuickBox looks quite interesting, (assuming that's quickbox.io) I hadn't come across that. Cheers. While QuickBox might be a bit heavyweight for my needs, it doesn't look like it would get in the way of anything I want and I'm not against things making my life easier!

When the 2 500 GB SSD's are running in RAID, you should get 1 TB if RAID 0 is used.
Quickbox is a seedbox deploy script. It is available here (Choose the community version). You will need to install ubuntu 16.04.
On the off-chance of sounding pretentious, but why are you using this script when there are a lot easier install scripts like swizzin, quickbox or even bytesized-connect. They are all very simple to use and don't really require a lot of Linux knowledge.
But to answer your questions

Does it say 20GB used or does it say that 20GB is the maximum available space? The latter could be a partition issue. What does it say if you type "df -h" into the Linux command line?

Does the auto-dl-irssi interface say that it's connected to the IRC channels and is monitoring them? If no, then make sure that you're connected on the IRC channel. If yes, then it could be that your filters are not configured right.
Setting up is fairly simple. Everything can be easily Google'd, eg. setting up partitions/OS installation. If not, post here. Newbie questions are generally well accepted around here.
I'd suggest installing Quickbox, it makes things super easy. Gives you access to a 'home page' webUI where you can 1-click-install packages. Assumes you know how to SSH into your machine. again, easy Google.

SSH in every now and then and run updates. Otherwise you'd just manage it like you would a Shared slot/box, ie. through rUtorrent interface or w/e you use.

You can get by on minimal knowledge of linux.

FreeNAS is very RAM heavy (they say 8GB minimum but I don't know how well it actually works with less), though you wont use ZFS on a laptop so there's little point with a full NAS package now I think about it. I have not yet been able to run a capture when/if it happens again but plan to. My current belief is that its possible one of the hops is having excessive usage at certain times.

My best advice:
Step 1: Get a VPS (Virtual Private Server). Many companies offer them at $5/mo for gigabit up/down.
Step 2: Use the quickbox tool to set up the server. Just follow the instructions.
Step 3: Install your desired tools.
3.1 Install Sonarr and Radarr for automatic movie and TV downloads. Sign up for about 3 free usenet accounts at xsusenet.com and add them to both so you can avoid copyright trolls. Lots of free tutorials online for configuring radarr and sonarr for usenet and torrent.
3.2 Use btsync, rsync, or syncthing to set up automatic syncing of donwloaded stuff to you or a cloud drive. I recommend your computer because you can configure it to automatically move stuff out of the folder, thereby freeing up space on your server. Google for more info.
3.3 Install rapidleech or pyload. These are great transload scripts to work with those terrible filehosters. Again, google is your friend.
Step 4: Profit!
Please contribute back: if you can, upload stuff you download (if it's decent quality) to cyberarms.

I run a Plex server built on Quickbox which uses both a reverse proxy to forward plex to port 31400 and http authentication on all pages (used to segregate access to other services on the box). I also run the server behind a firewall that only allows traffic out, the only way to access the plex server is through a VPN.
Now that that is out of the way, I've been having an issue since the last update (yes, the one that changes the way plex.tv authentication is done), some of my devices (all are on the same VPN internal network) are unable to access my server, they are not redirected to login to the new plex.tv site, they are just served a page that says something to the effect of this server is currently down. Now the strangest part of this (and why I am posting here, because I feel that there's something stupid I'm missing) is some of my devices were able to access the server with no issue (no re-authentication with plex.tv), some that needed to re-authenticate and did so successfully (were kicked out to plex.tv, I logged in, and it kicked me back to my server and allowed me to view my content) and finally the ones with the issue, those that are never kicked out to plex.tv and simply told that the server is down. In addition to that none of my "Plex Mobile apps" (both IOS and Android) can see the server (both say offline) yet my Roku app sees it as up.
Anyone have any Ideas? Because I can't seem to figure it out.

the dedibox 33816 is the one im talking about. Dude, a dedicated server is the best type of seedbox you can have. A seedbox isn't any specific type of server, its just a server running rtorrent, deluge and plex + anything else. With this setup you'll have your own box you dont have to share with anyone else.
