ROSA Image Writer is another good cross platform tool. It's written in C++/Qt5 which I feel a lot more comfortable with than a weird desktop web app frankenstein thing. Shares the same interface on all platforms.

That's very strange, especially with a LiveUSB working fine one day and not the next. This could be caused by the program you're using to burn the .ISO images to the USB stick, as that has caused me problems in the past as well.
The most reliable burning programs I've found for Linux distros are Rufus (for Windows only), as well as Etcher and Rosa Image Writer (both work on Linux, Windows, & Mac).
I would recommend trying one of those to see if that resolves the issue. ^_^
